CERVOLES

MOUNTAIN VITICULTURE FOR SINGLE ESTATE WINES

Some projects require a perspective that only comes with time to be fully appreciated. This is the case with the Cérvoles Celler [Ýeгvolas], started by Tomàs Cusiné 20 years ago to pay tribute to his ancestral terroir, renewing a practice that, at the time, did not have much following in the world of wine: mountain viticulture.

Having worked with the vineyards in the Urgell plain in Castell del Remei (the property acquired by his family in 1982), for Cusiné the vineyards at La Pobla de Cérvoles represented a true revelation and an extraordinary opportunity to rethink his work as a winemaker, taking on a far reaching commitment to the land of Les Garrigues and its people. This project also represented a return to essential roots without abandoning technological advances.

So in 1997, the Cérvoles Celler was created as a winery designed to produce high quality single estate wines, which express clearly the terroir where they are grown and with its sights firmly set on the ultimate goal: to be the first mountain viticultural project set up in Catalonia.

THE VINEYARD

Located in La Pobla de Cérvoles, in the sub-zone of Les Garrigues within the D.O. Costers del Segre, the vineyards of Cérvoles Celler occupy around 55 hectares and are divided into twelve plots with vines mostly of Garnacha tinta, Tempranillo, Syrah, Cabernet Sauvignon, Merlot, Macabeu and Chardonnay, planted between 1970 and 1989. The vines are located at 700- 750 metres above sea level and enjoy the benefits of mountain viticulture, the cornerstone of Cérvoles Cellar’s exceptional wines.

This winery’s approach to winemaking is based on the sustainable philosphy of organic agriculture and is aimed at producing higher quality wines: it determines the viticultural requirements which include harvesting by hand, high leaf exposure, green pruning, sorting grapes in the vineyards and yield control, among other practices.

COLORS NEGRE

  • Young aged red

  • Varieties: Garnacha tinta 55%, Cabernet Sauvignon, Merlot, Syrah.

  • Alcohol: 14% Vol.

  • Production: Each variety has been fermented separately in stainless steel tanks.

  • Ageing: 8 months in fine-grained and extra fine-grained French oak casks.

  • The youngest of Cérvoles Celler’s reds, this wine is an attractive picota cherry red of medium intensity with a rich aromatic palate where the first notes from its cask ageing appear (smoky, liquorice root), red fruits (glacé cherries) and dark fruit jam, and then, once it has breathed, spicy hints (red peppercorns) with balsamic accents together with dried flowers. The palate is ample and well-balanced, with wonderfully integrated tannins and a fresh, long finish.

CÉRVOLES GARNATXA

An amazing experience of fresh fruit and boiled sweets

  • 100% Garnatxa Negra (Garnacha Tinta/Grenache)

  • D.O Costers del Segre, Les Garrigues

  • This young wine represents our push for purity, no makeup, no masks - just fruit in its utmost expression. A large French oak tonneau of 4000L lightly shapes its evocative and captivating character. Partially vinified with whole grape clusters.

  • Strawberries, blackcurrants, blackberries and citrus jellybeans and spices cover the whole range of this wine which is a true reflection of this indigenous grape variety and the mountain viniculture that we practise at altitudes over 700 m.

  • We recommend chilling this wine to between 12º and 16º.

  • Excellent for a duck confit and sweet and sour dishes.

COLORS BLANC

  • Young white wine

  • Varieties: Macabeu, Chardonnay and Petit Manseng.

  • Alcohol: 13.5% Vol.

  • Production: Traditional, with the varieties fermented separately.

  • Ageing: On the lees.

  • Young white aged on lees, giving it greater volume and mouth feel. Straw yellow in colour with steely glints; intense aromas of tropical fruit (pineapple), melon and white peach with accents of hay and citrus, as well as the nuances provided by its ageing on lees; Good mouth feel with a ripe initial palate, unctuous mid-palate and pleasant acidity, adding to freshness. The finish is long-lasting with hints of crisp, green apple fruit.

CERVOLES NEGRE - LES GARRIGUES

  • Varieties: Tempranillo, Grenache and Cabernet Sauvignon

  • D.O Costers del Segre, Les Garrigues.

  • Several vineyards and plots (Gravera, Txel and Sorts Vell vineyard) colour the mountain scene like a patch work quilt. Various aspects and altitudes of between 700 and 800 metres allow for optimal grape ripening, always maintaining an important freshness.

  • Production:

    • Separate vinification of the different varieties.

    • Cold maceration.

    • The Grenache is aged in a 4,000 L French oak vat.

    • Tempranillo and Cabernet in 225 L French oak barrels.

    • Aged for 12 months in barrel and at least 6 months in bottle before release.

  • Tasting Notes:

    • Lively and expressive nose with hints of spice.

    • Ripe black fruits (plums, blackberry jam...) with balsamic and mineral notes.

    • Full bodied and intense on the palate with elegance, balance and good structure.

    • Ripe tannins and very good acidity and a long and persistent finish

ESTRATS

  • Red wine, highly expressive. Meticulous selection from the best zones on each plot of our vineyards. Vineyards between 30 and 50 years old.

  • Varieties. Cabernet Sauvignon 65%, Grenache 35%

  • Ageing. 18 months in new French oak casks. The Garnacha and the Tempranillo are aged in casks from Radoux (Radoux Blend is an extra fine-grained blend), the Cabernet Sauvignon in casks from Taransaud and the Merlot in François Frères casks. Regular bâtonnage during the first 5 months to achieve roundness and mouth feel.

  • Tasting notes. Red dark cherry colour, with fine intensity and highlights of the same hue. Very pleasant nose with aromas evoking the ageing process (cedar, cloves, pepper and dried fruit). Aeration reveals the full aromatic complexity of the wine, with spicy and balsamic notes, black fruit jam, plum, hints of tobacco, aniseed and the mineral touches which characterise Cérvoles. Pleasant, voluptuous mouth feel. Good acidity adding liveliness and freshness. On the palate, exceptionally mature tannins, well-integrated. Very long ending with smoky and spicy hints and notes of toasted almond skin and praline.

CERVOLES BLANC - LES GARRIGUES

  • Varieties: Macabeo and Chardonnay.

  • DO Costers del Segre, Les Garrigues.

  • Vineyards: The Chardonnay comes from the Cametes vineyard (1960s) and the Macabeo from the Oliveres vineyard (1990s).
    Late ripening.

  • Production:

    • Macabeo; fermentation and aging in 3,000 L French oak Foudre.

    • Chardonnay; in new 225 L and 600 L French oak barrels.

    • Periodic battonage in the first months.

    • Aged between 6 and 8 months.

  • Tasting Notes:

    • Bright, pale yellow. Gold highlights. Thick legs.

    • Strong patisserie notes. Smokey notes.

    • Fresh tropical fruit (grapefruit, Mandarin oranges, pineapple...).

    • On the palate, its unctuousness and volume stand out.

    • Toasted notes. Remarkable acidity that makes it fresh.

    • Honey with lemon and vanilla.
